Calling all butchers interested in working at the intersection of restaurant hospitality and sustainable agriculture.
About The Role:
Blue Hill at Stone Barns is a two-Michelin star restaurant and leading voice in the sustainable food movement. Together with our nonprofit partner, Stone Barns Center for Food & Agriculture, we form a research and education institute working to develop a regional and ecological future of food.
The Butcher will be responsible for assisting the restaurant’s Sous Chefs, Chef de Cuisine, and Executive Chef Dan Barber through the processing and production of various menu items in the butchery department. This includes the rendering of whole animal carcasses, production of specialty meat goods, and assignments pertaining to menu and recipe design.
At Blue Hill, we believe the best culinary professionals continuously strive to deepen their knowledge of food systems, cuisine, and hospitality.
